Nick's Kansas City Style Ribs

Ribs with a Kansas City style dry rub

BBQ sauce8 tbsp
Pork spare ribs3 lb
Black pepper1 tsp
Kosher salt3 tbsp
Paprika2 tbsp
Cumin1.5 tbsp
Oregano1 tbsp
Onion powder2 tsp
Garlic powder1 tsp
Allspice0.5 tsp
Cinnamon0.5 tsp


  1. Combine spices to form dry rub
  2. Trim ribs and season on all sides with dry rub
  3. Wrap ribs in tin-foil twice and place on cooking rack
  4. Pre-heat oven to 275F
  5. Bake ribs for a little under three hours or until pork is tender
  6. Remove ribs from tin foil (save juices) and finish on grill for 30 minutes (15 minutes a side or until charred)
  7. Warm BBQ sauce in pan and add half a cup of the pork drippings
  8. Serve ribs with BBQ sauce and cold beer
  9. Enjoy!
